Heels and Boots and Nikes and Sweet?

Today is the 100th day of school! All day we're participating in fun activities, like reading 100 books (collectively), counting 100 things, doing 100 jumping jacks, etc. I asked my students, "If you had 100 dollars, what would you do?" I got all types of responses, from buying a car to buying a house to buying a bike to helping homeless people get some food. The most colorful, however was: "If I had $100, I would get all the ladies." My response was, "How would you use that $100 to get all the ladies?" He responded..."I would buy some sweet shoes."

So guys...according to a first grade boy, the way to get all the ladies is to spend $100 on some sweet shoes. That kid does usually have some pretty sweet shoes. We'll see if it works ;)

Birthday Boy!

Colin's dad, Jack, celebrated his 30th birthday this past Saturday! It was so exciting to spend the day with the whole family...a "surprise" breakfast in bed and a fun trip out to the Udvar-Hazy Air and Space Museum. We got to hear lots of detailed info about the planes, shuttles, and gliders at the museum from our knowledgeable tour guide, Joe. Thanks for being born just 30 years ago, Jack! We love you :)

Jack has been wanting a collection of heirloom vegetable seeds and a way to plant/grow them. Colin, Kristin, and I gave him this "planter" & "seed packets" to represent the future gift we'll get him once he chooses the specific veggies he wants!

The Capital

Have you ever played the game, "I'm Going to Grandma's House?" It's the one where you go around in a circle and say, "I'm going to Grandma's house and I'm bringing a ____." The first person has to say something that starts with an A, the next person has to say something that starts with a B, AND has to say what the first person said. The game continues on through the alphabet and it becomes harder and harder to remember what all the people before you said they'd bring.

Well. As I sat down to tell you what I did a few weekends ago, the song from that game came into my mind. It went like this: "I went to Richmond and I'm bringing a ___." I couldn't think of what to put into that sentence. But the song is still playing in my mind. Look what being a first grade teacher will do to your sanity.

But seriously, I DID go to Richmond, the capital of my current state (Virginia, duh), to see some wonderful friends from college! These girls are the girls with whom I lived, ran around like dorks, cried, studied, watched LOST, and most importantly, pursued the Lord. We are all so different, yet love each other SO much :) The sum of the parts is GOOD. We tooled around Richmond, talked a lot, prayed together, had good food and wine, and of course... danced to techno music. We really missed two of our friends, Beth and Ashley, who couldn't make it for the weekend :( Weekends like these are so rejuvenating! Thanks to Stacie and Kristy for pulling the weekend together!!!

2011 Cookbook Challenge #1

What is the Cookbook Challenge? I will be cooking and posting at least one recipe from an cookbook every month in 2011! My friend Cassie challenged some of her friends to cook at least one recipe a month from an actual cookbook. Since all of us usually cook recipes from various websites, our lovely cookbooks often are neglected! So...here's January's cookbook attempt #1:

Stromboli
from Joy of Cooking

Yields two 12-inch stromboli

Ingredients:
-2 1lb packages of refrigerated pizza dough
-1/4 cup of Marinara sauce (see below)
-10 oz sliced provolone
-6 oz sliced salami
-4 oz sliced pepperoni

Preparation:
-Preheat oven to 400 degrees. Lightly grease 2 baking sheets. Place dough on baking sheets and let rise for 20 minutes.
-Use fingers to spread dough out to cover the baking sheets.
-Spread dough with divided marinara sauce
-Top with divided provolone, salami, and pepperoni
-Starting from a long side, tightly roll each rectangle up into a 12 in. log. Pinch ends closed and place logs seam side down on baking sheets.
-Bake stromboli until firm and lightly browned, about 20 minutes.
-Cut into 1 inch slides and serve hot or at room temperature.

Marinara Sauce
from Joy of Cooking

Yields 2 1/4 cups

Ingredients:
-2 lbs ripe tomatoes, peeled, seeded, and coarsely chopped OR 28 oz canned whole tomatoes with their juice
-1/3 cup olive oil
-3 garlic cloves, halved
-6 sprigs basil
-6 sprigs parsley
-Salt & Pepper

Preparation:
-Combine ingredients into a large saucepan and bring to a simmer over medium-low heat.
-Simmer, uncovered, crushing the tomatoes with the side of a spoon to break them up.
-Once the sauce is thickened (about 10 minutes), pass through the food mill and season with salt & pepper.


We served this meal to a group of friends that we get together with every Friday night for yummy food and good fellowship. Everyone LOVED these.. there wasn't a single crumb left.
However...I made a few changes that I think made the recipe taste better.

Modifications:
-I didn't know whether to use white or wheat dough. I made one of each, and we all agreed that the wheat dough was much better. It held everything together much better than the white dough.

-The recipe calls for more salami than pepperoni, but we really love sliced pepperoni! So, we used more pepperoni than salami.

-We added some sliced mozzarella to the provolone to give it a more "pizza-y" flavor.

-I used a LOT more marinara sauce in the dough. Like 1/2 a cup in each stromboli. Then, I put the extra marinara sauce in a gravy boat for people to pour over their stromboli. Also a big hit.

-I added diced green bell peppers to the marinara sauce. In my mind, the recipe was begging for more greens and that's how I got them in. It added some extra flavor to the sauce.

-I definitely used the canned tomatoes option... much easier for a weeknight meal.

-We don't have a food mill, so I just dumped the sauce into our blender and blended it.

Verdict: An easy and delicious meal to make!!! We will definitely make this meal many more times :)

Palm Beach

My mom's whole side of the family spent the time between Christmas and New Years in Palm Beach, Florida, with my grandparents (who we call Tiggy & Pop Pop). My mom's three siblings and all the spouses and kids were together for the first time EVER! My grandparents now have 10 granddaughters and one newly added grandson-in-law :) It was so much fun to all be together in one place. We had some professional photos taken of the whole crew, but those pictures won't be here for a little while. In the meantime, here are some of the pictures I took!
